Yes, you can use the Thule Hitching Post Pro # TH934XTR and it will do a good job for you. You're likely going to need bike frame adapter bars for the kids' bikes and for any other bikes that have aggressive step through frames; for those you can use the # 64005.
I also recommend getting the Thule Snug Tite Hitch Lock # THSTL2 and the Thule Cable Lock # TH538XT to secure your bikes.

Instead of rewiring everything I recommend product # RVS-611-IR which comes with infrared illuminators which help immensely when in low light / no light conditions.
Voyager designs their cameras to only work with their wiring and do not manufacture adapters so if you would like to switch to a voyager camera you would have to rewire your whole system. The manufacturer also stated that their products wouldn't be compatible with your in-dash Mercedes display screen.

-Gen-Y 2-Ball Mount for 2-1/2" Hitch Receivers # 325-GH-064.
This ball mount will use the larger 3/4" hitch pin # 58388 that you mentioned you have, however this ball mount is designed to fit into 3" x 3" trailer hitch receivers.
If your receiver opening is smaller, you can use the Curt Hitch Receiver Reducer Sleeves # C45408. This reducer sleeve will allow you to adapt the ball mount to your 2-1/2" or 2" receiver opening.

I can tell you that the Goal Zero Yeti 150 # 287-22004 is most likely not going to provide enough power for anything more than a couple strands of Christmas lights. For reference, a typical set of 25 C-7 Christmas lights pulls about 40 watts. The Goal Zero only puts out about 150 watts on AC power and is meant to work with small items that don't draw a lot of power, so you'd be struggling to power more than a 4-5 strands of lights with incandescent bulbs.

That's totally fine, it's just nice to have the ability to use a weight distribution hitch because if you ever do trade up or tow a trailer to move some stuff around and you get in the 3,500-4,000lb range these start being pretty useful to help with sag and keeping the trailer tracking straight.
